What is “Funky Natural”?
The coffee cherries are placed in bags and covered with black plastic sheets.
Water is then sprinkled over them, and they undergo an overnight fermentation process under the sun. After that, the cherries are sun-dried as they are. Through this unique process, complex flavors such as elegant woody notes, cacao, cream cheese, and spice—flavors not found in a typical natural process—are created. It is a new processing method developed by the Mierisch family. Please enjoy this completely new and distinctive taste experience.
