GW-2810 is a special lot processed through Abu Coffee’s original “Double Phase Washed” method — a unique two-stage fermentation followed by a careful washed process. This technique highlights the natural fruit sweetness through fermentation, while the final washing step ensures a clean and refined finish.

Double Phase Washed
“Double Phase” refers to a two-stage fermentation process. It combines both fermentation in the whole cherry and additional fermentation after depulping, aiming to balance fruit-derived sweetness with the complexity from fermentation. Since it is ultimately finished as a washed process, the resulting cup is typically clean and transparent, yet still retains the fruit sweetness and fermentation-driven aroma developed during the process.

Process Overview

  1. Hand-picking & Sorting
    Only fully ripe cherries are carefully hand-picked and sorted based on ripeness.

  2. Primary Fermentation (Open)
    The harvested cherries undergo open-tank fermentation for about 24 hours, allowing the natural fruit and juice to interact and bring out initial flavor development.

  3. Depulping
    After the first fermentation, the pulp is removed from the cherries.

  4. Secondary Fermentation (Sealed Fermentation)
    The depulped parchment (sometimes with a small amount of pulp remaining) is fermented again for 24–72 hours in sealed controlled tanks. This stage builds layered flavors — combining fruit character and fermentation complexity. In some cases, elements of anaerobic fermentation are incorporated.

  5. Washing
    After fermentation, the coffee is carefully washed to remove any remaining mucilage or residue.

  6. Drying
    The coffee is evenly dried on raised beds for 10–15 days, promoting stable flavor development and preserving quality.

This meticulous Double Phase Washed method results in a coffee that is vivid yet clean, offering a refined harmony of fruit sweetness, floral elegance, and crisp clarity in the cup.
