Mango Washed Process
Crafted with meticulous care, this process uses a unique fermentation method:
- 80 liters of mango juice infused into 200-liter fermentation tanks.
- Paired with panela, sugar, and select microorganisms to harmonize the coffee's pH and Brix levels.
- A slow, 190-hour fermentation ensures a delicate balance, highlighting mango’s natural sweetness while preserving the coffee’s inherent characteristics.
This innovative method creates an elegant infusion that balances tropical fruit flavors with the natural profile of the coffee beans.
